RECIPE: Vegan Paleo Sugar Free Chocolate Cake

I am making this cake weekly around here. It’s a constant source of sweet joy! There is nothing unhealthy about it, so it’s my guilt free answer to my love for dessert or a sweet midday snack.

My favorite way to eat a piece is with a dollop of Coconut Cream scooped straight out of the can and a few organic blueberries or Harry’s Strawberries on top, and when I’m feeling extra extra I sprinkle a few additional Lily’s baking chips on the pile.

Vegan Paleo Sugar Free Chocolate Cake

Satisfy your sweet tooth but keep it low glycemic with this yummy chocolate cake recipe made from Zucchini & Avocado!

Mix these Dry Ingredients First

  • 1 cup Almond Flour (Blanched is best, but Super Fine is cool too) (I use Bob's Red Mill)
  • ½ cup Cacao Powder (I use Navitas)
  • 1 tsp Baking Powder
  • 1 tsp Cinnamon
  • ½ tsp Kosher Salt

Next Mix these Wet Ingredients

  • ½ Cup Avocado (I usually use one whole large Avocado. Who wants to dirty up another cup?)
  • ¾ cup Granulated Monkfruit Sweetener
  • 2 NEAT EGGS Vegan Egg Replacement (You can use real eggs and your cake will be fluffier. But I have a sensitivity so I often use NEAT EGG.)
  • 1 tsp Pure Vanilla Extract (No Sugar Added)

Add in the Dry Ingredient Mixture and then add

  • 1¼ Cup Grated Zucchini (After manually grating a few Zucchini's, I bought and now use a food processor for this step. #worthit https://rstyle.me/+qr7nuxRa1mjLDEEpVAaIoQ)
  • 1 cup Sugar Free Chocolate Chips (I use Lilly's (it has Stevia) )
  1. Preheat oven to 350°. Line a loaf pan with parchment paper and grease with cooking spray.

Dry Ingredients

  1. In a large bowl, whisk together 1 cup of almond flour, ½ cup cocoa powder, 1 tsp baking powder, 1 tsp cinnamon, and ½ tsp salt.

Wet Ingredients

  1. In the mixer, mix together ½ cup avocado, 1 cup sugar, 2 Neat Eggs, and 1 tsp vanilla. Add 1¼ cup zucchini, then add flour mixture. Fold in chocolate chips.

Bake

  1. Transfer batter to prepared pan and bake until a toothpick inserted into the center comes out clean, about 1 hour.

RECIPE: Perfectly Simple Meatloaf

Maggie a perfect circle

UPDATE: This is a fav recipe from my Pre-Cancer Days. It would no longer fit within the new lifestyle.

We needed some comfort food for boxing day, the day that we lost Maggie (Jeff’s pup of over 14 years.) It was a sad day and the house felt quiet even with kids still high on the excitement of Christmas. So we filled the house with the smell of food and played Clue and did our best. She was a sweet girl dog that made this house feel like a home. It’s hard to be dogless.

 

Perfectly Simple Meatloaf

Ingredients
  • 2 lb Ground Beef (30% Fat)
  • 1/2 Onion
  • 1 Green Pepper
  • 1 tsp Sea Salt
  • 1/4 tsp Fresh Ground Pepper
  • 4 tbsp Ketchup
  • 1/2 cup Croutons
  • 2 eggs
  • 2/3 cup of Whole Milk
  • Sauce – 4 tbsp Apple Cider Vinegar
  • Sauce – 1/2 cup Ketchup
  • Sauce – 4 tbsp Brown Sugar
Instructions
  1. Preheat Oven to 350″
  2. Finely Chop up Onion and Green Pepper
  3. In a large bowl, mix all of the Meatloaf ingredients together
  4. Stuff the loaf into a 9×5 Loaf Pan, round the top
  5. Mix up one batch of the Sauce Ingredients and pour over the top (I like to poke little holes for some to sink into the loaf)
  6. Place in Oven at 350″ (Drip Pan below)
  7. Bake for 1 hour and 15 minutes
  8. Pour off fat, cut and serve with a little dollop from a second batch of sauce

Post Party Split Pea Soup

2014 Informal Formal Christmas Party

Each year, I like to sink into the Christmas spirit in formal wear at my home alongside some friends and family. A few highlights are important to hit each year, hot cocoa and peppermint schnapps, a simple menu of cheese, meats and crackers, a spiral cut ham, and a group photo.

In the days following – as I continue to munch on the spoils of leftover finger foods – comes the Split Pea Soup from Heffe’s mama’s recipe box.

Vivian’s Split Pea Soup

This slow cooker soup recipe is the best way to discard of your most recent Christmas Party hambone! 😉
Ingredients
  • 2 1/2 Cups green split peas
  • 2 1/2 Cups cold water
  • 2 1/2 Cups White Wine
  • 1 Onion Finely Chopped
  • 2 Carrots Finely Chopped
  • 1 Stalk Celery w/ Leaves, Finely Chopped
  • 1 Meaty Ham Bone
  • Herbs de Provence, Salt & Pepper to taste
  • Croutons
Instructions
  1. Layer split peas, onions, carrots, ham bone & then celery into slow cooker.
  2. Pour over Water and Wine, do not cover Ham Bone
  3. Place on High for 5/6 hours or Low for 8-10 hours
  4. Remove bone & press mixture through food mill
  5. Return to slow cooker pot
  6. If needed, season w/ more salt & pepper
  7. Garnish w/ croutons
